Here is what you need:
(3) vine ripened tomatoes (0pts)
1/4 cup of red onion (0pts)
(2) small cloves of garlic (0pts)
(1) tbsp of good olive oil (3 pts)
(1) tbsp of balsamic vinegar(0pts)
(2) tbsp of fresh chopped basil (0pts)
salt and pepper to taste
The whole batch is only 3 points!!! And it serves ALOT!! The original recipe you are supposed to add mozzarella. I added it later and it didn't really enhance the flavor so for now on I'm leaving it out!
Here is what you do: Mix the oil and vinegar and then add the onion, salt and pepper. Set aside. Chop the tomatoes, garlic and basil and add to the marinated onions. And that's it!! Serve with some crusty ciabatta and it's a perfect app for a party or for yourself! And it tastes soooo fresh and so much better than what you can buy at the store.
Oh wait...that's not it! On skinnytaste.com she put the bruschetta on top of chicken! YUM! Try it...you won't regret it! :) This isn't the best picture but you get the idea! You can see the fat free mozz I added.

I served this with a side salad. Overall awesome dinner. Very satisfying and relatively low in points. I couldn't stop eating the bread so I am fullll and happy :)
