Anyways...I did meal prep a pretty awesome dish this week and ended up going to the gym...once. Considering the fact that I am still nursing my back...I'm counting that as a successful week.
I'm going to first start with this awesome meal that I used to make all the time and brought it back to life this week! It's SO easy...and doesn't include avocado...I'm just as surprised as you are...
There is no recipe because I am famous for just throwing random shit together and calling it a meal. I once ate this couscous salad thingy and that is what inspired me to create this delish clean meal. So basically it's just grilled chicken served with couscous that has cucumbers, tomatoes and red onion in it...topped with feta. I put a Mediterranean sea salt seasoning blend on my chicken and it turned out amazingly good. As for the couscous...if you want to get a little dirty with it...add a little Italian dressing to it for flavor. To be honest I did that this week and it was so good. You can eat it warm or cold...leftovers out of the fridge taste on point! I ate this all week and even served it to my friend who also loved it. Quick and easy...just how I like it.

I know I know...going to the gym 1 day a week will not help my weightloss efforts. I'm aware of that. I am basically going just to keep my motivation and have some fun. I love zumba and lately I haven't been obsessing over it. I'm hoping that if I keep going every week I will get my obsession back. And anyways...1 workout is better than 0, am I right?

DeleteIt's been a while since you posted. I hope all is ok. Post and let us all know how things are going. Oh and by the way, going to the gym only once just to keep motivated while you are nursing a hurt back is all good. Your back is more important than worrying about how many calories you burned in Zumba or on the treadmill! Take care and hope to hear from you again soon.
