Supportive Significant Others and Egg Muffins...FTW!

I guess it's been an eventful week considering I have a bunch of things to blog about today. I wasn't sure if I wanted to break these up into different posts or go all out in one.  I think that I will go ahead and post my workouts in another post and concentrate on some pretty awesome things today!

First off I want to state that the title of this post includes my two favorite things at the moment. Actually three favorite things because for some reason I can't stop saying FTW (for the win).  I know I'm all late and wrong but I keep using it all the time haha.

Ok so now on to the important things...

How hard is it to concentrate on your goals without a team of cheerleaders cheering you on?  Seriously...think about it.  When you're feeling down or looking for a boost it is almost imperative to have great people surrounding you.  I can honestly say that I have AMAZING support from every aspect of my life.  Friends, family, social media friends, BLOG READERS!  Everytime I need that extra boost I can always find it and I'm very grateful for that.

Obviously I have a point I'm trying to make and it was very much influenced from a terrible episode of TLC's My 600lb Life. The lady's husband was terrible disgusting unsupportive a nightmare!  He would make nasty comments and was such a negative influence in her life and the changes she was working so hard to make.  This got me thinking about my relationship and relationships in the past and how lucky I am.  I have always had supportive boyfriends regarding my weightloss journey and my goals.  They always cheered me on and wanted the best for me.  Of course the boyfriend I have now is the absolute best and I am so lucky.

I was so excited when I finished my workout last Thursday.  I was feeling pumped and was just smiling like a freak.  Obviously because it has been awhile since I really connected with a workout and I was stoked.  I shot over a text to my man and his response made me melt into a mushy pile of love.

xoxo

Now let me just state that I started this journey for myself and I will never try to lose weight for anyone other than myself.  I suppose the way I worded my first text sounds a bit off but I promise that's not how I meant it. Now...how amazing is he?  I'm very lucky.

He may be mad if he finds out I just wrote a post about him ha.  But it's a good post!! :)

Now on to part 2.

Egg mufffffffffffffffins.  These things have been posted all over instagram and I've been dying to try them out.  So glad that I did because MAN are they awesome.  So simple. So easy. So convenient. So yummy.

Egg Muffins
YUM!
There are a ton of different ways to make these and I just added my own ingredients based on what I felt like eating.  I'm sure they can be made healthier by axing the potatoes and cheese but...everything in moderation right?  I baked these at 450* until they were golden brown, not sure how long but maybe like 10-15 minutes? The potaotes I used had onions and peppers in them so that added great flavor. I think next time I will bake the potatoes in the muffin pan first to get them crispy then add the eggs.

Let me know if anyone decides to make these and what ingredients you used!

  4. Aw! That text was so sweet! It really is just so important; sometimes (shark week) when I'm extra pathetic and my hubby is being extra patient, I get all teary-eyed from sappiness. Good for you! :)
